Yesuff Fitfit is a delicious and refreshing meal especially good for Lent.


2 cups sunflower seeds

2 cups green pepper (chopped) (chili Jalapeno)

½ tsp. onion (chopped)

¼ tsp. ginger (chopped)

¼ tsp. garlic (chopped)

salt to taste

10 cups water

4 - 6 slices injera


Boil sunflower seeds at high temperature in 6 cups of water for 15 minutes. Remove from heat and drain off liquid. Grind seeds in a blender until they turn to a paste. Put paste in medium bowl and add 4 cups of cold water. Mix and strain, pour liquid in bowl and discard the paste. Add onions, ginger, green pepper to the liquid. Mix well and salt to taste. Break injera into small pieces and add to the liquid. Make sure that the injera is well soaked. Refrigerate. Serve cold in a bowl.


Makes 4 - 6 servings.
