WEST AFRICAN SLAAI (AVOCADO, PEANUT & GINGER SALAD)

 

This African recipe is borrowed from the official Peace Corps cookbook used by our assistant editor Steven Hall when he was stationed in Swaziland.

 

2 tbs lemon juice

1 tsp ginger

1 tsp salt

2 large ripe avocados, cut into " cubes

cup peanuts, chopped

 

In serving bowl combine lemon juice, ginger and salt; stir until well mixed. Add avocado and toss gently and thoroughly. Let salad marinate at room temperature for at least 30 minutes and sprinkle with chopped peanuts.
