SWEET POTATO SALAD

 

4 large sweet potatoes

medium onion, chopped

lemon juice

peanut oil

2 - 3 medium tomatoes

salt

pepper

 

Boil sweet potatoes in their skins until tender (about 20-30

minutes). Cool, peel and slice. Add chopped onion, sprinkle

liberally with lemon juice and oil; salt and pepper to taste.

Garnish with tomato slices. Chill.

 

Serves six.
