SWEET POTATO PUFFS

 

Note that the sweet potatoes must be cooked, mashed and chilled before you can prepare the puffs.

 

1 - 2 cups flour

1 tsp. baking powder

tsp. salt

tsp. ground cloves

tsp. cinnamon

tsp. nutmeg

2 eggs, slightly beaten

2 cups sweet potatoes, mashed and chilled

oil for deep frying

 

Sift together the flour, baking powder and spices. In another bowl, combine the eggs and potatoes, then beat in the dry-ingredient mixture to make a stiff dough.

Roll the dough out on a lightly floured surface to a thickness of about a half inch. With a knife, cookie cutters, or the rim of a glass, cut into shapes. Fry in deep fat for 2 or 3 minutes. Drain on clean, absorbent cloths.

Variation: Sprinkle with confectioners’ sugar and serve as a dessert.
