SQUASH WITH PEANUTS

 

1 cup roasted peanuts, shelled
2 Tbs. peanut oil
2 to 2 cups cooked squash
salt
white sugar or brown sugar

Chop shelled roasted peanuts in a blender with a coarse blade. Add squash to oil and salt to taste. Heat slowly for about 15 minutes. Serve hot and topped with white or brown sugar.

 

Serves four.
