1 large onion
1 clove garlic, finely chopped
1 tblsp. oil
1 can sardines
2 large tomatoes, chopped, or 2 oz. tomato paste
1 chili pepper, or 1 tsp. cayenne pepper
1 bunch leafy greens, or 1 small package frozen greens (spinach, turnip greens, kale, etc.)
In a large, heavy pan, brown onion and garlic lightly in oil. Add the other ingredients and cover with about 2 cups water. simmer for 30 minutes. Serve over rice or stiff porridge.
Variations: Substitute fresh, smoked or salt-dried fish for the sardines.
Serves 2 - 4.
