MOAMBE MONKEY (PALM NUT TANNED MONKEY)

 

Recipe from Cathy Ndjoli, restaurant le Maquis, Kinshasa, Zaire.

 

a small tanned monkey
500 gr. of palm nuts
2 onions cut in big pieces
3 big fresh tomatoes, sliced
2
chilies

salt

pepper

Wash the monkey with soap and largely rinse it. Dry it and burn its skin. Cut it in eight parts and dink it in mild water.

Then: Wash the palm nuts and boil them during 20 minutes. Drain, grind. Mix to the hot water and sieve. Put the monkey in a pot and add the moambe (nuts). Add the chilies, tomatoes and onions. Cook for 45 minutes.
Serve with ground plantain bananas, another pastry or rice.
