Herb teas are very popular in West Africa. This one, a favorite in Liberia and Sierra Leone, is made with the slender blades of wild lemon grass. Fresh lemon grass is available in Asian markets and natural food supermarkets. Try this tea with any rich dessert.


1 cup chopped lemon grass leaves

2 cups boiling water

sugar (optional)

milk (optional)


Place the lemon grass leaves in a teapot and pour the boiling water over them. Steep for about 5 minutes.

Serve with sugar and milk, if desired.


Makes 2 cups.
