JOLLOF RICE USING STEWING BEEF

 

1 lb chicken

1 lb stewing beef

lb smoked ham or bacon

c flour

1 medium onion, chopped

c cooking oil

1 small can tomato paste

2 c rice

1 pkg frozen mixed vegetables

3 c water

Salt and pepper to taste

 

Cut up chicken, beef, ham, and bacon. Season with salt and pepper. Heat oil in a pan, saute onion; add ham, beef, bacon and tomato paste. Stir well, cover and simmer with 1 cup water for 1 hour. Add remaining water, salt, and pepper. Bring to a boil. Add chicken and rice and simmer until rice is done. Add vegetables 5 minutes before removing chicken-rice mixture from fire.

 

Serves 4.
