In Burkina Faso, city-dwelling Christians make these tasty cookies during the Christmas season.


3 c. (14 oz.) finely chopped, salted peanuts

3 eggs

1 c. brown sugar, firmly packed

3 tbsp. all-purpose flour

tsp. baking powder


Preheat the oven to 350F.

In a medium bowl, combine the peanuts, eggs, brown sugar, flour, and baking powder. Use a spoon or mixer to stir until well blended.

Place tablespoons of the dough 1-inch apart on a baking sheet.

Bake for 10 minutes or until lightly browned.


Makes 3 dozen cookies.
