2 cups rice
1 pound fresh spinach, washed, trimmed, and finely chopped
1 onion, finely chopped
2 tomatoes, stemmed and quartered
1 cup cooked chicken, ham, or lamb, cut to taste
4 cups water

teaspoon ground red pepper

In Dutch oven or large saucepan, mix rice, spinach, onion, tomatoes, meat, and water. Bring to a boil over high heat, stir, and reduce heat to simmer.
Cover and cook for about 30 minutes, or until rice is tender. Add teaspoon red pepper and salt and pepper to taste. Stir well.
