Here is our third Madagascar recipe from Judith Ritter. It is another unusual - and spicy - salad from L’Exotic Restaurant in Montreal.


3 jalapeo chilies, stems and seeds removed, minced

2 green mangos, pits removed, peeled and julienned

1 onion, minced

2 cloves garlic, minced

2 to 3 tablespoons minced fresh parsley

juice of 2 limes

3 tablespoons olive oil

salt to taste


Combine all ingredients and serve as a side dish with grilled or roasted meat or fish.


Serves 4 - 6.
