FOUTOU (MASHED YAMS)

 

Yams
Water
Salt
Pepper
Red Peppers
Grated Nutmeg

Peel the yams and boil them in water. When cooked, drain water and then pound yams with a mortar.
Highly season this mash with salt, pepper, red peppers, and grated nutmeg.
Eat with chicken or other fricassee.
