CANJICA

 

1 kg of green maize
1 l of water
500 g of sugar
6 eggs
1 stick of cinnamon

 

Crush the maize with a mortar and pestle, then boil in water for a short while. Extract the water using a fine mesh sieve, and to this water, add the sugar and the cinnamon and heat until the mixture reaches a consistency in which it forms drops ‘like a pearl’ when poured from height. Leave to cool down. Once cooled down, place on a low heat and mix in the eggs (which have been previously beaten) and cook until ready, stirring continuously.
