But’echa’ is another variety of a vegetarian dish. It may be eaten with injera or bread.


2 cups powdered chick peas or lentils

½ cup oil

1 cup red onion (chopped)

1 Tbsp. mustard

2 Tbsp. lemon juice

¼ tsp. black pepper

salt to taste

¼ cup red pepper (berbere)

4 cups green pepper


Mix chick pea powder with red pepper in 1 cup of water and cook over low heat for 10 - 20 minutes. Remove from stove and set aside. Blend green peppers with red onion, oil, black pepper, mustard, lemon juice and salt to taste. Add this to the powder mixture, blend well, cook and serve.



Makes 6 servings.
