Stop! Café Maure! said a sign that caught my attention on the steep road to the imposing sixth-century fortress of Kelibia, at the tip of Tunisia’s Cap Bon peninsula. I obeyed the sign, and stepped into the modest open-air café overlooking the sea, where I took a seat on a straw amt in front of a low, round table. The house specialty was this wonderfully refreshing strawberry drink. Over the next hour, I had several glasses while breathing in the pine-scented air and enjoying the magnificent view of the scintillating blue waters of the Mediterranean.


2 tablespoons fresh lemon juice

1 cup water

˝ cup fresh or frozen strawberries

2 teaspoons orange flower water

sugar to taste

1 fresh mint sprig for garnish


In a blender, mix the lemon juice, water, strawberries, orange flower water, and sugar. Pour over ice into a tall glass. Decorate with a sprig of mint.


Serves 1.
