BANANA SAVOURY

 

Remote and land-locked, the C. A. R. is mainly rolling grassland and bush, with pockets of dense rain forest. Ninety per cent of the population farm small plots of land, growing staple foods like cassava, maize, millet, sorghum, sweet potatoes, yam, plantain, banana and groundnuts. Dairy produce comes from the long-horned local cattle, and every homestead has its clutch of chickens, providing the egg yolks used in this recipe.

 

700 g green bananas, peeled

1 onion, finely chopped

110 g lean bacon, chopped

pinch of thyme

pinch of marjoram

tsp salt and freshly ground black pepper, mixed

20 g margarine

5 g salt

 

Add the 5 g of salt to a pan of water. Cook all the ingredients together until the bananas are soft. Drain off all water and puree in a blender. Serve as a side dish for fish or meat.
