BANANA FRITTERS

 

These are another treat in Malagasy. They are served as a vegetable and may be added to your Malagache dinner.

 

2 cups all-purpose flour

2 tsp baking powder

1 tsp salt

2 large eggs, beaten lightly

1 cups milk

2 Tbs vegetable oil

3 bananas, cut in slices

Sift the all-purpose flour with baking powder and salt. Combine the eggs with milk and vegetable oil. Stir into the dry ingredients. Add the bananas. Drop by spoonfuls in deep fat, fry at 375 F, and cook until golden brown.

 

Serves 8.
