This recipe is from our friend Judith Ritter, who often writes about the cooking of Madagascar. She sampled this salad at LExotic Restaurant in Montreal, Québec.
2 fresh tomatoes, chopped
2 shallots, minced
½ onion, chopped
juice of ½ lemon
1 tablespoon minced fresh ginger
1 tablespoon chopped fresh parsley
2 tablespoons olive oil
salt to taste
pepper to taste
Madagascar Sauce Dynamite to taste
Combine all the ingredients and serve over lettuce.
