Heres another party favorite, this time from Ghana. Try this accompanied by some appetizers. Some hosts add vodka or gin to really liven up the party.
1 fresh pineapple
3 whole cloves
peelings from half an orange
1 quart boiling water
sugar to taste
ice cubes
1 sprig fresh mint for garnish
Slice the skin off the pineapple and save the peels. Chop 1 cup of the pineapple fruit for use.
Place the pineapple peelings and fruit, cloves, and orange peelings into a bowl or jar. Add the boiling water, cover, and let stand for 24 hours. Strain through a strainer or cheesecloth. Sweeten with sugar as desired.
Pour over ice cubes and serve with a sprig of fresh mint on top.
Makes 1 quart.
