1 large green (unripe)
papaya
1 coconut
coriander seeds
2 - 3 tbs. sugar
Skin papaya and cut into
thin slices widthwise to form rings. With a sharp knife,
carefully cut each ring into spaghetti-like spirals by starting
at the outside curve of the ring and going round and round until
the center of the ring is reached. Prepare coconut milk by
grating the coconut meat and tying it in a piece of clean muslin.
Squeeze muslin bag over a bowl to
extract.
Serves 4.
