This recipe takes about 10 days to prepare and uses only the banana peels. Use the bananas to make Banana Fritters or Dreams.
12 bananas
4 cups light brandy (aguardiente), or white rum
2 cups sugar
Peel the bananas. Place the banana peels in a large jar with the aguardiente. Cover and store for 10 days in a dark place. Meanwhile place sugar in a pot and cover with ½ cup water. Bring to a boil and continue cooking until the mixture is syrupy - that is, when a little syrup is removed with a skimmer and a fine layer forms that can be moved around easily, about 10 minutes.
Mix the sugar with the liqueur. Strain the mixture and pour into a bottle. Cork it; place the bottle on its side and let it age, about 6 weeks.
Makes 1 quart.
