These date cakes are made with honey. dates contain more calories than beef and more sugar than any other dried fruit, but also the vitamins A and B, with the minerals magnesium and phosphates.
60 g dates, stoned and chopped small
75 g margarine
2 tsp vegetable oil
2 tbsp soft brown sugar
50 ml clear honey
2 eggs, lightly beaten
110 g self raising flour
1 tsp allspice
75 ml skimmed milk
Roll the dates into a little flour and set aside. Cream the honey, margarine and sugar together in a bowl and beat the eggs into the mix. Sift the remaining flour and allspice into the bowl and fold it into the mixture. Pour in enough milk to make a thin batter and fold the dates into the batter. Oil 12 small cake tins or a cake tray and spoon mixture into the tins. bake in a fairly hot oven for 15 minutes until golden brown.
