Cookies are often deep-fried in Africa, and especially in the west in countries like Nigeria, Ghana and Liberia. They have a strong spicy flavor and a most pleasing crunchiness.
4 eggs
½ cup sugar
2 cups self-rising flour
2 tsp. cinnamon
1 Tbs. grated orange rind
4 oz. butter or shortening
In a 1-quart bowl beat eggs until light and frothy. Add sugar and beat until smooth. In a 2-quart bowl place self-rising flour. Add cinnamon and grated orange rind. Cut in butter or shortening as for pie crust. Blend the egg mixture into the flour to form a dough. Knead lightly until smooth. Roll out ½ inch thick on a floured board. Cut into 1-inch-wide shapes such as triangles, squares, rounds, etc. Deep-fat fry at 375 ºF until golden brown and drain on a paper towel.
Makes 16 cookies.
