100 g (4 oz) white sugar
50 ml (2 fl oz) water
2 eating apples, skinned, cored and each cut into 8 slices
To make the caramelized apple garnish, put the sugar and water into a heavy-based saucepan and heat to dissolve the sugar. Bring to the boil, then continue to cook without stirring until the sugar caramelizes (be careful not to let it burn). Carefully add the apple slices and coat them in the caramel. Lift out with a couple of forks and cool on a wire tray.
