These tasty orange biscuits are very popular on the African islands of São Tomé and Príncipe.
6 egg yolks
3 egg whites
1¾ cups sugar
½ cup (1 stick) butter, melted
juice of 2 oranges
1 tablespoon grated orange rind
1¾ cups flour
Heat oven to 375°F.
Beat egg yolks, egg whites, and sugar together. Mix the butter, orange juice, grated orange rind and finally the flour, ½ cup at a time. Combine the flour mixture with the egg mixture. Mix well and press onto a 10 by 15-inch buttered baking sheet. Bake for 15 minutes.
Remove from the oven, invert onto a wire rack and cool. Cut into 2-inch strips and place on a baking sheet. Return to the oven to toast, turning over to brown evenly.
These will keep in an airtight container for a week.
