The white roasted cashew nuts should not be omitted from this dish. They play an important role in Maputo, the capital of Mozambique. Of the some 60 million cashew trees, 40 million already bear fruit. Not only the nuts are valuable, but also the shells for they contain plenty of cashew nut oil, while juice, jam and wine is made from the thick fruit stalks.
4 steaks
2 tablespoons oil
salt
pepper
4 mangoes
50 g (2 oz / 3 tablespoons) melted butter
1 teaspoon cinnamon
roasted cashew nuts
Brush steaks half an hour before grilling with oil, season with salt and pepper. Place on rack in pre-heated oven and grill on both sides for 3 - 4 minutes. Peel mangoes, remove stone and cut flesh in thin, oblong slices. Top each steak with 2 - 3 slices, sprinkle with melted butter and dust with cinnamon. Put steaks back on rack and grill until mangoes are tender and golden brown.
Sprinkle steaks with nuts and serve with green beans.
