60 ml (4 T) oil
750 g (1˝ lb) shin, cut into cubes
45 ml (3 T) flour
salt to taste
pepper to taste
2 onions, chopped
1 garlic clove, crushed
5 ml (1 t) ground cumin
5 ml (1 t) ground coriander
3 potatoes, diced
4 carrots, sliced
1 beef stock cube
500 ml (2 cups) water
Heat the oil, toss the meat in seasoned flour and fry until brown on all sides. Remove the meat and keep warm.
Add the onion, garlic, cumin and coriander to the oil and sauté until transparent.
Add all the remaining ingredients and heat until boiling. Reduce the heat and simmer for about 45 minutes until cooked through. Serve with samp.
