AVOCADO SALAD

 

A rich tasting salad.

 

8 leaves of kos lettuce

2 medium sized avocados, each peeled, stoned and cut into 8 longitudinal slices

2 medium sized fresh tomatoes, cut into 16 wedges

6 tablespoons lemon or lime juice

1 teaspoon salt

3 tablespoons olive oil

1 teaspoon black pepper, ground

¼ teaspoon dried, chopped dill weed

¼ teaspoon dried chopped mint

 

Marinate the avocado slices in the lemon or lime juice for 30 minutes. Make four individual salads by placing 2 lettuce leaves on each of 4 plates. Arrange 4 slices of marinated avocado on each plate and add 4 wedges of tomato to each plate.

Make up the salad dressing by mixing together the mint, dill weed, pepper, salt and olive oil. Pour a few teaspoonfuls of dressing onto each salad.

Serve immediately.
