Rice, papaya, and coconut milk might seem like an odd combination. The mixture is, however, a delicious one. This dish goes well with roast pork or grilled chicken.
1 cup rice
½ teaspoon salt
½ teaspoon ground cinnamon
2 cups coconut milk
1 papaya, peeled, seeded and cut into small pieces (about 1 cup diced)
Place the rice, ¼ cup water, salt, cinnamon, and coconut milk in a medium-size pot and bring to a boil. Cover, reduce heat, and cook for 20 minutes. Fluff the rice with a fork and let stand for 10 minutes.
Mash half the papaya and mix it and the papaya cubes with the rice. Serve hot.
