2 oz / 50 g dried apricots, chopped
10 fl oz / 300 ml water
9 fl oz / 250 ml fresh apple juice
9 fl oz / 250 ml fresh orange juice
4 apple slices
Put the apricots and water in a saucepan and bring to the boil, cover and simmer for 10 minutes. Leave to cool, then transfer to a blender and add the apple and orange juice. Blend smooth and put in the fridge. When cold stir well, pour into 4 glasses and garnish each glass with a slice of apple.
Serves 4.
